Why shred hard disks instead of only wiping them?

Software wiping works only on drives that still function, and it must be verified drive by drive. Degaussing works only on magnetic hard drives and does not work on SSDs. Physical shredding destroys the platters and memory chips themselves, so it works for every type of storage, including failed and damaged drives. It is the most secure option when drives will not be reused.
